    Save Money in your Zero Waste Kitchen! Learn cutting edge creative tips for how to cut waste, save money and eat healthy. 

    Building on SPEC's experience and expertise in running zero waste workshops, students will learn about: 

    • Tips and tricks to save money in the kitchen 
    • What a zero waste kitchen looks like 
    • Ways to reduce and track your waste

    Instructor: Sara Blenkhorn
    Sara is an entrepreneur, a futurist, a systems-thinker, a facilitator, a sustainability strategist, and a collaboration ninja. She works with values-led organizations helping them to take collective action for a better world. Sara has 13 + years working in the sustainability field. Sara dove into the scientific side of sustainability earning a Masters degree in Strategic Leadership Towards Sustainability. For the last 4 years, as the founder and CEO of Future Strategies, Sara has called herself fortunate to work with inspiring organizations across the globe designing better systems for participation and experiences that unlock our collaborative potential. Sara spent the last year and a half working with LOCO and Salt Spring coffee to move them from a 71% -93% diversion rate. Additionally, with SPEC's waste committee, she has lead an outreach initiative to restaurants to help them adopt recycling and composting systems, helping them to cut their kitchen costs.

    Cancellation Policy: SPEC reserves the right to cancel any course or reduce the number of instructional hours, should the class not reach 50% capacity 5 days before the class. In the event that a course is cancelled, SPEC will offer students the option of transferring to another course, or obtaining a full refund.

    Refund Policy: All cancellations must be made at least 5 working days before the start of the course by contacting fieldschool@spec.bc.ca or 604.736.7732. A 15$ processing fee is charged for cancellations. There is no fee for transferring the registration to another person.

    Extend your growing season this year with a solar greenhouse! Learn how solar greenhouses use passive design features to collect and store energy from the sun rather than from other sources. 

    Students will learn about: 

    • Structure & design (including materials) 
    • Passive design features 
    • Active solar technologies 
    • Collecting & storing energy 
    • Methods of greenhouse food production 
    • Plants to use in your greenhouse

    Instructor: Rob Baxter

    Rob Baxter is a co-founder and a director of the Vancouver Renewable Energy Cooperative and Chair of SPEC's Energy Committee. He teaches a course in renewable energy for Langara College Continuing Studies. He is an advocate for renewable energy, specifically solar energy as well as sustainable transportation. Rob believes in practicing what he preaches and has constructed a solar greenhouse for his family's use.

    Don't just learn how to prune! Learn the art of fruit tree canopy management. From pruning cuts to maximize fruit production, to tree growth, to common diseases, to the proper shape of a canopy.

    This class will go over the theory of canopy management, followed by a hands-on portion. Take this opportunity to become an urban orchardist!

    Students will learn about: 

    • Understanding tree growth & development 
    • Canopy Architecture: Shape & size of canopy 
    • Pruning Cuts: What they are & how they are used

    Instructor: Dr. Kent Mullinix

    In addition to his extensive research and management experience, Mullinix has lived and worked on a diversified family farm in central Missouri, owned and operated (with his family for over 25 years) a pear orchard on the eastern slopes of the Cascade Mountains, and for 14 years provided direct oversight for the planning, establishment and management of a 45 acre organically farmed apple, sweet cherry and peach teaching and demonstration orchard in north central Washington.
